Dumping grapes?!

Every year, around mid-July, we select roughly 30-35% of grapes to be dumped from the vines. Yes, we get rid of 1/3 of perfectly healthy grapes!

By doing so the objective is multi-fold: to allow for better ventilation of the grapes left (and thus reducing the potential onset of molds, which allows us to reduce the number and quantity of treatments); to ease the manual harvest by removing the more intricate bunches; and least but not last, to reduce the burden on the vines, and to allow them to concentrate in fewer grapes all nutrients and ripening effort.

The procedure is psychologically hard to us who carry it out, but the result is right there in your glass to taste…one slow sip at a time!
